Panforte is a traditional fruit cake from Siena, Tuscany – it’s dense, chewy and sweet and made with nuts, dried fruit and sometimes spices. It’s thought to have been inspired by fruit cakes in ancient Rome. Margherita is a classic flavour and one of the best-known. It’s made with a delicious combination of almonds, honey, candied citrus rind, spices and dusted with icing sugar. Bonci Tronchetto Raspberry and Gin 500g (order now, available mid November)
Panbriacone made with candied raspberries and candied lemon rind, soaked with a sweet gin liqueur. Baked in a loaf (Tronchetto) shape. Panbriacone roughly translates to ‘drunken cake’, it’s a delightfully fluffy cake which is soaked with various liqueurs after baking.
