further maturing for at least one year. Aging in wood gives the product an amber colour and improve the organoleptic flavours as tannins.

This rare oil is only produced occasionally, in years when the olives in higher regions continue to ripen into the months of April and May. These late-spring olives are particularly mature which means production is short and limited.
