This EVOO is made using a special selection of olives collected from the Roi- Gaaci olive grove in Badalucco. The Roi-Gaaci olive grove is located at 500 meters above sea level. The olives are selected for this oil when 40% are green, 50% undergoing maturation and 10% are black. Tones of dried fruit and an aroma of green apple peel enrich the sweet oil.
