Balsamic Vinegar from farmhouse producer Acetaia Reale in Modena, Italy. ‘Serie 10’ means it has been matured over time in a series of 10 wooden barrels (approximately 10 years), creating a a rich, sweet/savoury flavour. It is made from grape ‘must’, cooked, then matured using a slow acetification process, triggered by natural fermentation and gradually evaporated over years of ageing in barrels of different kinds of wood. No aromatic substances area added. Thick like syrup, it is shiny and dark brown in colour, with a characteristic fragrance, complex and penetrating, and a harmonious acidity. A traditional, inimitable bittersweet flavour is well balanced with velvety overtones.
