Oak Blue is a beautifully balanced single herd blue cheese from the Gippsland region is made by Barry Charlton of Berrys Creek Gourmet Cheese. Barry’s expertise has been recognized with the highest awards at the World Cheese Championships in Wisconsin USA. The pâté of Spring View Blue is straw coloured with striations of greenish-blue mould, it should be moist and not too crumbly. It has a creamy texture and long intensity with definite earthy tones on the finishing palate.

This delightfully oozy cheese is a mild washed rind style made with 100% sheep’s milk from the Argental region of France (most famously known for Roquefort cheese). When young, the flavours are creamy and slightly sweet, with a hint of mushroomy flavour coming from the light orange rind and a gentle nuttiness characteristic of sheep cheese. More mature cheeses will have a stronger flavour, with more pronounced earthy flavours.

Gouda Boeren Oplegkass 36 months Slow Food Presidio
A truly unique aged Artisan Gouda. Only made during the summer season when cows graze on the open pastures of the Green Hart region, between the cities of Amsterdam, Rotterdam and Utrecht, this Gouda has a dense rich butterscotch flavour. “Opleg” meaning “aged” in Dutch, Boeren Goudse Oplegkaas is aged a minimum of 1 year, up to 4 years. As it’s a small production, this Gouda is part of the renown Slow Food Presidium.

Tennerone Tre Latte (Sheep Goat Cow milk)
This brie-style cheese has an incredibly smooth, unctuous texture that coats your entire palate and a rich flavour with an amazing length and depth. Occelli al Barolo
Cheese royalty meets wine royalty – once you taste this cheese you will be hooked! Full flavoured ‘testun’ cheeses are coated with the pressed grapes used to make Barolo wine – the flavours of the cheese and grapes mingle together to create a flavour that is bitey, creamy, sweet, winey, buttery and sharp all at once (testun loosely translates to ‘hard-headed’, referring to the texture of the cheese). Once you cut through the coating of crushed grapes, the texture is flaky and melt-in-your mouth soft.

Latteria Vecchio

Latteria Vecchio is an incredibly popular choice for cheese and antipasto platters. Our artisan version has everything you expect from a well-matured, hard Italian cheese – notes of milk and herbs on the front palate and then a slightly savoury bite to finish with a whisper of fruitiness. Notes of salted caramel or butterscotch might be present in extra mature cheeses. The name ‘latteria’ is a variation on the Italian word for community dairy (latterie) and vecchio = old/matured.

Morbidi Pecorino Stagionato in Fossa
This cheese is made according to the ancient practise of ‘pit-maturation’ – this process can’t be rushed and is well worth the wait. Young cheeses are wrapped in a cheese-cloth then placed inside a small stone pit in the ground, which is sealed over to restrict oxygen flow. After a few months the cheeses are retrieved, transformed by the unique environment. A rich, savoury flavour and pronounced bite develop to compliment the sweet, grassy notes in the cheese.
