This EVOO is made from a special selection of olives, collected from the olive grove of Roi- Morga in Montalto Ligure, 250 meters above sea level. The olives are selected when 20% are green, 50% are undergoing maturation and 30% are mature. Tones of dried fruit and an aroma of green apple peel enrich this sweet oil.
