Product Information
Named after famous French gastronome and avid cheese-lover Jean Anthelme Brillat-Savarin, this cheese is pure indulgence without being over the top. Under the thin, white rind the triple cream interior has a soft, whipped texture and a rich flavour with a light, lingering finish. Like other double and triple creams, it does have added salt, but it is very subtle on the finish.

Comté Aop, matured 12 months
Comté is the king of French cheeses – every wheel hand-made and subtly different. It is truly a pleasure to eat. Our 12-month Comté has a smooth, supple texture and sweet nutty flavour with hints of butter and grassy pastures. It is a fantastic choice for a cheese board and a popular fondue cheese.

Parmigiano Reggiano Dop Organic
The King of Cheeses – a great Parmigiano Reggiano like this is a kitchen staple. Our reggiano from Cantarelli is sweet and savoury with a well-balanced bite. It also has an amazing texture – crumbly and flaky, but still incredibly moist – the result of aging in the family’s naturally ventilated cheese caves, used since the 1800’s for maturing Parmigiano Reggiano. Don’t let a single gram go to waste – use the rind to flavour soups and stocks (discard before serving). Each wedge comes packaged in a special foil to protect the cheese from oxidisation.

Délice des Crémiers (Triple Cream)
Délice des Crémiers translates to ‘delight of the cheese-maker’ – and it certainly lives up to its name! Under the thin white rind the interior is super-decadent – rich and creamy with a cakey, whipped texture. There is a note of tangy crème fraîche and a hint of salt on the finish. Enjoy before dinner with a glass of bubbles.

Barilotto Buffalo Milk Ricotta Salata 550g
A unique cheese – a little like ricotta salata, but not so salty. It’s a firm, fresh cheese made with buffalo milk and buffalo whey, lightly salted and matured for 40 days. It has a rich, milky flavour and a firm, smooth, slightly chalky texture. Barilotto is delicious shaved into a salad or grated onto fresh pasta in tomato-based sauces. Quicke’s Double Devonshire (Gloucester)
Matured for only 4 months, Quicke’s double Gloucester has a crumbly texture with tangy earthy flavour and a creamy finish on the palate. The orange colour comes from the natural colorant Annatto. All Quicke’s cheeses are hand-made with milk sourced from their own herd, on the farm that has been in the Quickes family for over 450 years! Throughout the year the Quicke’s family will insure that enough hay has been made in summer, from their pastures, to feed the cows over winter.
Mimolette
Known for its striking deep-orange colour, Mimolette was apparently created to mimic Dutch cheeses during a time of trade restrictions. While the colour may suggest a ‘strong, bitey’ cheese, the flavour is actually quite round and smooth. It has a predominantly hazelnutty flavour with hints of salt and butterscotch on the end palate. Mimolette is very wine friendly, pairing well with a variety of sparkling, white and red wines.

Fiore Sardo Pecorino Dop – Busso Slow Food Presidio
A rustic pecorino from the island of Sardinia in Southern Italy. It has a subtle, smoky, rustic flavour and round grassy, slightly sheepy notes to finish. During maturation the texture becomes firm and slightly crumbly, but not overly dry. Ideal to serve with antipasti platters, or on a cheese board with our Brezzo Chestnut Honey.
