During a 20-month maturation, the 35kg wheels of cheese develop an amazing depth of flavour – the underlying sweet note is accompanied by a rich flavour of roasted nuts and subtle creamy, yeasty finish. Chabichou du Poitou
A semi-matured goat’s cheese from the Loire Valley in France. The fresh, clean flavours of goat’s milk are complimented by a rich nutty flavour coming from the wrinkly white rind. Under the rind the texture is smooth, with a slightly chalky centre. Pairs well with a Sauvignon Blanc or Pinot Noir.

The cheese: This full-flavoured pecorino is matured the traditional way – on pine boards in a stone cellar, known as a grotta. It is coated with fresh hay when it is young to protect the cheese and to add a deep, complex grassy flavour that compliments the rich, buttery flavours of the sheep’s milk. The cheese develops a subtle savoury bite. It is smooth and even on the tongue, coating the entire palate with the flavours of the Tuscan countryside.

Gorgonzola Dolce Latte Dop
This is the milder version of Gorgonzola – sweet and gentle, rich and creamy. There is still a touch of spice from the pale blue mould, but it is quickly tamed by the incredible creaminess of this cheese. Gorgonzola Dolce Latte has a luscious texture with some super-runny patches here and there. Even people who say they don’t like blue cheese like this.

Infossato Pecorino Casa Madaio
Infossato is matured in a pit in the ground lined with hay and ferns – an ancient practice through-out central and southern Italy. Over time the cheese develops a sharp sweet/savoury bite, a deep golden colour and firm, crumbly texture. Ideal for anyone who likes a full-flavoured pecorino with some bite – but not too salty. Latteria Vecchio is an incredibly popular choice for cheese and antipasto platters. Our artisan version has everything you expect from a well-matured, hard Italian cheese – notes of milk and herbs on the front palate and then a slightly savoury bite to finish with a whisper of fruitiness. Notes of salted caramel or butterscotch might be present in extra mature cheeses. The name ‘latteria’ is a variation on the Italian word for community dairy (latterie) and vecchio = old/matured.

Brunet
Another one of our best sellers, this is a great choice for goat’s cheese lovers and novices alike. It's made in the style of the traditional ‘robiola’ cheeses of Piedmont. Montasio Stravecchio Dop
Montasio is the most famous mountain cheese from the north-eastern Italian region of Friuli. We select only very mature wheels (around 3 years old) as the extended aging leads to the development of a subtle, savoury bite perfectly balanced with notes of cream and tropical fruit on the finish – especially pineapple. Montasio is a very popular cheese that works well with pre-dinner drinks, cheese boards and antipasto platters.

Mastorazio Pecorino Casa Madaio

Bûche de Chèvre 250g
Bûche de Chèvre is made in a traditional log shape, and then rolled with ash to create a unique appearance by the Fromagerie Jacquin. The flavour is light and fresh with some richer nutty and earthy notes emerging under the striking black rind.
