As per the DOP production statement, this product is made of 100% cooked grape musts of the Modena area, aged for 15 years in wood barrels. Bottled in Modena using the exclusive 100ml jar and sealed with a numbered tag as a guarantee for the Protected Denomination of Origin (PDO).

It is made from grape ‘must’, cooked, then matured using a slow acetification process, triggered by natural fermentation and gradually evaporated over years of ageing in barrels of different kinds of wood. No aromatic substances area added. Thick like syrup, it is shiny and dark brown in colour, with a characteristic fragrance, complex and penetrating, and a harmonious acidity. A traditional, inimitable bittersweet flavour is well balanced with velvety overtones. Traditional balsamic vinegar of Modena is an absolutely unique product, available in two varieties differentiated on the basis of the age: 12 and 25 years. It is used to season boiled fresh vegetables, in meat stew and to complete the preparation of meat, fish, cheese or fruit. In its unique bottle, this product bears a mandatory Seal of Guarantee and is subject to strict control on the part of the ‘Consortium of Producers of Traditional Balsamic Vinegar of Modena’.
