Making aged artisan Gouda requires expertise and craftsmanship – two families who have mastered this craft work together to create this truly unique artisan cheese. Only made during the summer season with raw milk from cows grazing on the open pastures of the ‘Green Heart’ region between the cities of Amsterdam, Rotterdam and Utrecht, it has a rich butterscotch flavour that’s incredibly moreish. Each wheel is carefully aged for 3 years to create the characteristic dense texture with small crystals throughout. This cheese became a member of the Slow Food Presidium in 2005, an acknowledgement of the traditional cheese-making methods and the commitment of the farmers and cheese-makers to working for a healthier future. ‘Oplegkaas’ translates to ‘aged cheese’ and ‘Boeren’ translates to ‘farmer’.
