A semi-hard cheese from pasteurized whole buffalo milk. Its thin rind covered in pressed ground black pepper encases a compact dry paste with small and even eyes. Its complex olfactory notes include butter, umami, yeast, aromatic herbs like salvia, and floral notes of honey. Sweet mouthfeel, with a balanced saltiness and slight milky and vegetable aromatics. A pleasant consistency thanks to its melt-in-the-mouth and crumbliness.

Roquefort AOP Carles – The Best there is!
Roquefort is one of the most famous French AOP cheeses. The flavour is big and bold with a burst of spicy blue mould on the front palate. The finish is creamy – but in an entirely different way to a cow’s milk cheese – more grassy and nutty, very deep and lingering. A salty note hums away in the background, bringing balance to all the flavours. Serve the French way – on a baguette with farmhouse butter and truffle honey.

Cinerino Pecorino Casa Madaio
Cinerino is a pecorino coated with aromatic ash from local myrtle trees. In the small town of Castelcivita, the feast of St Anthony is celebrated with bonfires where myrtle branches are burnt – this fine, grey ash is collected and used to coat the wheels of cheese to impart a flavour of myrtle and herbs which balances perfectly with the nutty, grassy notes in the matured cheese. Latteria Vecchio is an incredibly popular choice for cheese and antipasto platters. Our artisan version has everything you expect from a well-matured, hard Italian cheese – notes of milk and herbs on the front palate and then a slightly savoury bite to finish with a whisper of fruitiness. Notes of salted caramel or butterscotch might be present in extra mature cheeses. The name ‘latteria’ is a variation on the Italian word for community dairy (latterie) and vecchio = old/matured.

Comté Aop Marcel Petite Fort St An. matured 24months
Comté is the king of French cheeses – every wheel hand-made and subtly different. Délice des Deux-Sèvres Cendree
A semi-matured goat’s cheese from the Loire Valley in France. Picked by Affineurs from the cheesemaker 10 days after making, Délice des Deux-Sèvre Cendree will spend a few extra weeks maturing nicely Traditionally ashed Délice des Deux-Sèvre Cendree has an oozy texture under the rind with a slightly chalky center. The clean citrusy and goat flavour pairs well with local a sauvignon blanc.

Manchego Artesano Raw Milk 12months PDO
Manchego is Spain’s best-known sheep’s milk cheese and has official DOP status. This raw milk farmhouse version is matured for a minimum of 12 months creating a firm, compact texture. Capo Di Stato cut 250g
Cheese and wine combined – this is one of the famous ‘drunken’ hard cheeses of Italy, matured for a minimum of 12 months. This full-flavoured cheese is soaked in the local red wine, which stains the rind dark purple and seeps into the cheese creating ‘purple veins’ and amazing depth of flavour. It is strong and bitey with pronounced wine and grape flavours. The texture is firm, smooth and slightly flaky – the wine soaking helps to keep it moist. The cheese takes the name from the wine used for his maturation. The Capo di Stato wine is an excellence of Treviso area. A cheese that stands out for elegance and balance.
