This Vinegar from Modena has been matured in cherry casks to add an explosion of flavours and aromas typical of cherry blossoms. ANAMI, literally “admire the flowers” is the famous cherry blossoms to which we are also inspired by the graphics. It is made from grape ‘must’, cooked, then matured using a slow acetification process, triggered by natural fermentation and gradually evaporated over years of ageing in barrels of different kinds of wood. No aromatic substances area added. Thick like syrup, it is shiny and dark brown in colour, with a characteristic fragrance, complex and penetrating, and a harmonious acidity. A traditional, inimitable bittersweet flavour is well balanced with velvety overtones.
