Casatella Trevigiana DOP
A special type of stracchino, Casatella is a traditional fresh cheese of the Treviso region and DOP regulations state that only milk from the local area can be used to make the cheese. It has a creamy, milky, slightly sweet flavour with a dense, soft texture. It can be eaten fresh and is also used in regional recipes including gnocchi, risotto and baked dishes.

Stracchino is a fresh cheese, milky and lactic with a hint of yeasty flavour peeping through. These individually wrapped stracchino are made by a specialist dairy near the Piave river in Veneto, hence the name which translates to ‘cream of Piave’. The texture is soft and spreadable – ideal for laying on fresh crusty bread or adding to a sandwich or panini. Use as a melting cheese in pasta and baked dishes. Best eaten as soon as possible.

This stracchino made with 100% buffalo milk has a rich, creamy flavour with a touch of milky sweetness characteristic of fresh buffalo cheeses. The texture is soft and almost spreadable and the colour is pearly white. Use in salads, panini and baked dishes.
