Il Forteto Cacio di Fossa Cave-aged Pecorino
This full-flavoured pecorino is made according to an ancient tradition. Once made, the fresh cheeses are matured in a small pit in the ground (a fossa), which is sealed over to limit the oxygen flow, thus creating a unique sweet/savoury flavour and slightly piquant bite in the cheese. The texture is moist, but also slightly crumbly and the rich nutty flavours of sheep’s milk are present on the finish. Il Forteto is a dairy cooperative using sustainable farming practises and creating cheeses based on traditional recipes that reflect the Tuscan terroir.
Serve on cheese platters with honey and fresh fruit, or on antipasti platters with cured meats and olives. This cheese can also be shaved or crumbled into salads as you would other mature cheeses. Pair with medium-bodied red or white wines, particularly Italian varietals such as Chianti and Valpolicella.

Montelupo
Winner of the best aged cheese in the Italian Cheese Awards 2024, Montelupo is made with milk from cows grazing on the lush mountain pastures of the Lessini mountains north of Verona. The wide variety of alpine flowers and herbs in the pastures give the cheese a unique and full flavour, which further intensifies during a 24-month maturation – developing a robust bite while retaining subtle milk and cream flavours on the long, lingering finish. Under the tough leathery natural rind, the interior is almost rock hard and a beautiful golden yellow colour. Meticulously crafted by La Casara Roncolato, a family-run cheesemaking business with roots dating back to the 1920s.
When serving Montelupo, select accompaniments and wines that will match its bold character: acacia honey, toasted nuts and mustard fruits are all recommended partners; wine matches include Barolo, Amarone della Valpolicella or a high quality dry Prosecco Superiore DOCG Valdobbiadene.

Appleby’s Cheshire
We are thrilled to be ranging Appleby’s Cheshire – the only raw milk, clothbound, farmhouse Cheshire still in production. Paul and Sarah Appleby are based on their family farm Hawkstone Abbey Farm in Shropshire and have cheese-making in their blood – Paul’s grandmother came from a line of Cheshire cheese-making matriarchs and founded Appleby’s in the stables next to the farmhouse kitchen on the farm in 1952. Appleby’s Cheshire has a juicy acidity with a subtle earthy complexity and hint of minerality. The soft, open texture has a delightfully delicate crumble.

Lincolnshire Poacher
Named after a traditional regional folk song, Lincolnshire Poacher is one of only a few cheeses to be made on the East coast of England. The Jones family have owned their farm here since 1917 but didn’t start dairying until 1970 and cheese-making until the 1990s when 4th generation son Simon Jones and Welsh cheese maker Dougal Campbell developed and refined a unique recipe combining the characteristics of mountain cheeses like Gruyère with traditional English cheddar. Smooth and dense, savoury with hints of beef broth and occasionally tropical fruit, this cheese is truly a masterpiece. It’s hand-made with raw milk from the family’s own herd of Holstein Fresian cows matured on wooden boards for at least a year to develop their trademark flavour and texture.

Westcombe Cheddar
Westcombe Cheddar is a traditional, handcrafted, raw milk clothbound cheddar and one of only three cheeses classed as ‘Artisan Somerset Cheddar’ by Slow Food UK.
The cheese-maker’s philosophy is not to force the development of certain flavours, but rather to let the fresh, raw milk from their farm express its natural characteristics. This cheddar is known locally as a ‘five mile cheddar’, as you’re still tasting it five miles down the road! The flavour is full and confident with notes of beef broth, a mellow lactic tang and hints of caramel and citrus on the long-lasting end palate.

Grand Formaggio Di Pecora Bitti Sardo Bio
This is a Sardinian pecorino cheese, cooked, coagulated with calf rennet. The flavour highlights the scent of the Mediterranean pastures on which they feed the sheep. Was established with the intent to use all substances present in milk, essential for our body, thus improving the nutritional aspect and in particular, one linked to the digestibility of fat and milk protein. During his long ripening occurs a strong proteolysis and lipolysis: both proteins that fats are broken down into smaller organic molecules, making the product easy assimilation by the body and easier to digest. In addition to the low salt content and the large content of calcium lactate, it is recommended in any diet food, as in that of hypertensive, but also to strengthen the skeletal system and prevent osteoporosis.

The paste is compact and is characterized by a color that varies from light yellow to straw yellow. The Sasso Nero has a crystalline structure and a slightly melting consistency in the mouth. Its typical flavor and the notes of roasted chestnuts, dried fruit and honey are the result of the long aging. The aftertaste has sweet notes of caramel and chocolate. Monte Veronese di Malga DOP Slow Food Presidio
The mountains around Verona, the Monti Lessini, are particularly well suited to pasturing cows, with gentle grassy slopes and a long growing period. The local cheeses are almost always made using milk that has already been skimmed for butter production. The term “Monte” in the name probably refers to the production technique, which involves the processing of milk from multiple milkings (monte in dialect). Mountain Pasture Monte Veronese, which is suited for aging, is made in Alpine dairies (malghe) with milk from grazing cows, while typical Monte Veronese can be made with the milk of cows living indoors at lower elevations.
The Monte Veronese di Malga DOP is aged for at least 10 months before we get it. The cheese is made using raw milk from cows that have been feeding on the lush pastures of the mountainous Lessinia region. This cheese is also part of Slow Food Presidia, which has a focus on preserving traditional foods around the world. The cheese has notes of tropical fruit, hay and a subtle sweetness that is at once nutty and fruity. Cheese made from mountain-pasture milk is often not properly valued. Several decades ago, there were over 100 mountain pastures in the Lessini mountains, but they have now been transformed into holiday homes or are used for grazing beef cattle. The milk produced by cows grazing in the mountain pastures is often mixed with milk from cows kept indoors. The Presidium unites a few dairies that have decided to separate the milk produced in the Lessini pastures and to make Malga Monte Veronese, to promote its quality.

Not your usual tangy earthy english cheddar it has a deeper more complex flavour from meaty, brothy and savoury to sweet and fruity. The paste is crumbly and firm with a drier texture and more complexity with an incredible buttery texture on the palate. The flavour of Montgomery’s Cheddar can vary tremendously. One of the principal reasons for this is that the starter culture is changed every day over the course of a week, with the consequence that each day has its own character.
