A lactic set, soft cows curd cheese, made in the style of fresh chevre goats curd, with a spreadable creaminess and a delicate lactic tang.
Our cow’s curd is a fresh, young, and mild cheese, made with made with the evening milk from Camden Valley Farm. Perfect for breakfast on toast with marmalade or honey, with the first of Spring’s asparagus, with crusty baguette, in a salad, tart, quiche or even in desserts.
Texture: Spreadable, smooth, slightly firm with a rich mouthfeel

Goldstreet Clouds 225g
A fromage blanc (fresh white cheese) style, inspired by Colin’s time and learning from Australian cheese godfather, Richard Thomas. A light, fluffy, cloud like textured curd made with Camden Valley Farm Jersey milk that is lightly cultured, salted and whipped. This cheese pot is based on the French, Fromage Blanc and is best eaten super fresh with a sprinkle of raw sugar for breakfast or lunch or with sea salt, fresh cracked black pepper, warm bread and breakfast radishes at the start of a meal. Use it to cook with in either savoury or sweet applications, in dips such as cervelle de canut or served with jelly as a delicious after dinner treat.

Flavour: Soft, delicate, lactic, light and airy. Some say it is better than yoghurt, we agree.
Serving suggestions: It is very versatile, use in place of butter with bread, in dips, with fresh and stewed fruit, with beef tartare, vegetables, in sauces, cheesecakes, gelato and mousses. Or just as is with a spoon.
Goldstreet Dairy Jersey Cheese 275g
Gold st Dairy signature cheese, ‘Jersey Cheese’ is a semi-hard, cooked curd cheese made to be grilled but can be enjoyed in a number of ways. Think, a cross between halloumi, feta, and mozzarella, a creamy, slab of cheese with a crisp exterior and soft, layered, and textured curd inside when grilled over high heat.
Made from single sourced Jersey milk from Camden Valley Farm, this cheese was developed over a number of years and has now found its place in the Goldstreet cheese range with a cult following.

Prom Country Kongwak Reserve with native Mountain Pepper Berry
Prom Country Cheese was started by Burke and Bronwyn Brandon and has since changed hands to the Hales family, who continue to make the stunning range of cheeses with certified organic milk from their own herd of cows and Burke and Bronwyn’s flock of sheep. Kongwak is hard, vintage sheep cheese made with a pinch of native Mountain Pepperberry which imparts a subtle herbaceous, slightly spicy note to compliment the sharpness in the underlying cheese. Made from organic spring milk from sheep grazing in the hills upstream from the small valley township of Kongwak, overshadowed by a hilltop bushland reserve.

Prom Country Granny’s Blue
Each 2kg wheel of Granny’s Blue captures the clean flavours of 18 litres of rich cow milk from Wattlebank Park Farm in South Gippsland, where the catchment waters flow down out of the Moyarra Valley, the home of Prom Country Cheesery.
It displays a grey-white, crusty rind with a dense spread of blue filaments. Although the structure seems crumbly, the mouthfeel is mild, buttery and soft. Ideal for salads, crumbled over pasta, or served with fruit and nuts. Wedges are cut from a 20cm diameter, 2.1kg wheel.
Complemented by fortified wines such as liqueur muscat and port. Also snuggles up nicely to a buttery Chardonnay.

Delicate, creamy blue mould sheep cheese. Vegetarian rennet. Made from pure sheep milk from our farm, each 2kg wheel captures the nutrients of rich, clean pastures. The wheels have a grey-white, crusty rind with a moderate spread of blue cavities. The mouthfeel is mild and creamy with a soft finish typical of sheep cheese. A distinctive table cheese that is also ideal in salads, crumbled over pasta, or served with fruit and nuts. Complemented by dessert wines such as a Late Harvest Pinot Gris.

Oak Blue
Oak Blue is a beautifully balanced single herd blue cheese from the Gippsland region is made by Barry Charlton of Berrys Creek Gourmet Cheese. Barry’s expertise has been recognized with the highest awards at the World Cheese Championships in Wisconsin USA. The pâté of Spring View Blue is straw coloured with striations of greenish-blue mould, it should be moist and not too crumbly. It has a creamy texture and long intensity with definite earthy tones on the finishing palate.

Pyengana Cloth Bound Cheddar
Pyengana Cheddar is a handmade cloth bound cheddar. The cheese is wrapped in muslin cloth to protect the surface of the cheese. The cheese is then sealed with lard to prevent it from drying out. It is then rubbed and turned each week. Pyengana Cheddar is matured in the cellar under the cheese factory in a cave like environment. Natural air ventilation is used to draw cool air 1 km down an underground tunnel to maintain a consistent temperature and an ideal environment for maturing cheddar cheese.
As the cheese matures it develops a strong flavour, it has a crumbly body and a full flavoured bite. Aged for 18 months.
