Canestrato Pecorino

Cinerino Pecorino coated with ash

Cinerino is a pecorino coated with aromatic ash from local myrtle trees. In the small town of Castelcivita, the feast of St Anthony is celebrated with bonfires where myrtle branches are burnt – this fine, grey ash is collected and used to coat the wheels of cheese to impart a flavour of myrtle and herbs which balances perfectly with the nutty, grassy notes in the matured cheese. Fiore Sardo Pecorino, Mature

A rustic pecorino from the island of Sardinia in Southern Italy. It has a subtle, smoky, rustic flavour and round grassy, slightly sheepy notes to finish. Forte Scuro Pecorino

Forte Scuro translates to ‘strong, dark’ – reflecting the sharp flavours and crumbly texture of this matured cheese rubbed with ash and olive oil during an extended maturation. Even though up-front this cheese is quite bitey, the finish is still well-balanced and grassy – characteristic of good Tuscan pecorino. This is a great cheese for anyone looking for a full-flavour that isn’t too salty or piccante.

Infossato Pecorino

Infossato is matured in a pit in the ground lined with hay and ferns – an ancient practice through-out central and southern Italy. Over time the cheese develops a sharp sweet/savoury bite, a deep golden colour and firm, crumbly texture. Ideal for anyone who likes a full-flavoured pecorino with some bite – but not too salty. Paglierino Pecorino

A medium-matured pecorino, cave-aged for around 3 to 4 months. It is made with milk from sheep grazing in the National park of Cilento and the Valley of Diano. The flavour is balanced and gentle – slightly sweet, nutty, grassy flavours coming from the rich sheep’s milk with a mild, savoury finish. Pecora Dairy Bloomy White

Bloomy White is one of only a handful of Australian-made soft, sheep’s milk cheeses. It is hand-made by Michael and Cressida McNamara – owners of Pecora sheep dairy. Michael and Cressida milk their own herd of East Friesian sheep. When young, the texture is dense and fudgey and the flavours mild, rich and creamy with a subtle crème frâiche note. As Bloomy White matures, the texture will become runny under the rind and the flavours will intensify with more pronounced hints of grass and lanolin. Bloomy White is a seasonal cheese made during Spring and Summer, availability may be limited in other months. From time to time, Bloomy White may also be ashed, creating a striking black and white rind. Made with non-animal rennet.

Pecorino di Castel del Monte

This pecorino is very sharp and tangy with a distinctive, rustic flavour – sheepy with hints of lanolin and green grass. It’s made with milk from sheep grazing high on the Gran Sasso plateau 1,800 metres above sea level. In recognition of the traditional grazing and cheese-making processes, this cheese is a member of the Slow Food Presidium.

Pecorino in Grotta

This full-flavoured pecorino is matured the traditional way – on pine boards in a stone cellar, known as a grotta. It is also coated with hay when it is young to protect the cheese and to add a deep, complex grassy flavour that compliments the rich, buttery flavours of the sheep’s milk. The cheese develops a subtle savoury bite. It is smooth and even on the tongue, coating the entire palate with the flavours of the Tuscan countryside.

Sotto il Noce Pecorino

A delightfully rich, elegant pecorino with a smooth, semi-firm texture. Sotto il Noce delivers a double dose of Tuscan terroir – semi-matured wheels of pecorino are rubbed with local walnut liqueur and then pressed with leaves from walnut trees. The resulting walnutty, earthy notes lift the cheese to a whole new level of flavour that is full, but not overpowering or strong. This a very wine-friendly cheese, enjoy with Pinot Grigio or Sangiovese. Produced by Il Fortetto.

Manchego, matured 12 months

Manchego is Spain’s best-known sheep’s milk cheese and has official DOP status. This farmhouse version is matured for a minimum of 12 months creating a firm, compact texture. The flavour is smooth with a grassy sweetness and a slightly oily finish with hints of creamy Brazil nuts in the background. Enjoy with a glass of Tempranillo.

Pecorino di Pienza al Mosto

There is a long history of ‘seasoning’ cheese rinds with different ingredients to create unique and distinctive flavours. This little pecorino has been coated with wine pressings and then matured in barrels, creating an intense grapey perfume that balances the natural bite and rich grassy, nutty flavours in the cheese. This is a farmhouse cheese made with milk from sheep grazing on the rich pastures in the Orcia Valley near the town of Pienza in Tuscany.

Pecorino di Pienza Stagionato in Fossa

This cheese is made according to the ancient practise of ‘pit-maturation’ – this process can’t be rushed and is well worth the wait. Young cheeses are wrapped in a cheese-cloth then placed inside a small stone pit in the ground, which is sealed over to restrict oxygen flow. After a few months the cheeses are retrieved, transformed by the unique environment. A rich, savoury flavour and pronounced bite develop to compliment the sweet, grassy notes in the cheese.

Roquefort AOP

Roquefort is one of the most famous French AOP cheeses. The flavour is big and bold with a burst of spicy blue mould on the front palate. The finish is creamy – but in an entirely different way to a cow’s milk cheese – more grassy and nutty, very deep and lingering. Truffetto

This is a fresh pecorino with shaved truffle throughout. It has a fresh, light flavour reminiscent of a double cream. A subtle truffle flavour rises up on the mid-palate, mingling pleasantly with the flavour of the cheese rather than overpowering it.
