Pecorino di Pienza al Mosto
There is a long history of ‘seasoning’ cheese rinds with different ingredients to create unique and distinctive flavours. This little pecorino has been coated with wine pressings and then matured in barrels, creating an intense grapey perfume that balances the natural bite and rich grassy, nutty flavours in the cheese. This is a farmhouse cheese made with milk from sheep grazing on the rich pastures in the Orcia Valley near the town of Pienza in Tuscany.
