Fromage de Meaux

No cheese plate is complete without a slice of good French Brie! Fromage de Meaux is the pasteurised version of the raw milk one Brie de Meaux which is ban in Australia. Our Fromage de Meaux has a full, round flavour with well-developed mushroomy and yeasty notes. Under the rind the texture is gooey, and it’s best served the traditional way with a French baguette.

Raw Milk Cave-aged Swiss Emmentaler – Slow Food

At around 1,000 metres above sea level nestled in the lush hills of Emmental, lies the Hüpfenboden cheese dairy of cheese master Bernhard Meier. All milk for cheesmaking is sourced from 12 small local farms, where cows graze on the local pastures which are filled with herbs and wildflowers. Together with the use of home-made starter cultures, this unpasteurised local milk creates a cheese with a true taste of terroir – sweet and smooth with a light nuttiness, hint of butter and lingering finish with notes of green grass and herbs.

Petit Munster

Munster is a very well-known and well-loved soft ‘stinky’ cheese from the region of Alsace-Lorraine. As Munster matures the surface of the cheese is regularly rubbed with brine to encourage the development of a sticky orange crust and pungent aroma. It has a smooth, sometimes runny texture and assertive flavours of cured meats and porcini mushrooms with an intense, savoury finish. Best matched with a late harvest Riesling

St Nectaire AOP

This pasteurised milk cheese is modelled on the raw milk AOP Saint Nectaire. It’s a medium-strength washed rind style with a dense, buttery texture. The flavours are balanced and slightly savoury with subtle hints of mushrooms and crusty sourdough bread coming through, rounding out to a creamy finish with earthy notes on the back palate. Serve on cheese boards accompanied with fruit jams, marmalade or glacé clementines. It can be enjoyed with bread, or herbed crackers (rosemary, fennel etc). It pairs well with craft beers and most medium-bodied white and red wines, Merlot and Riesling in particular. When young (with a thin, pale orange rind and bulging interior), it can also be used in tartiflette and gratins, although older cheeses are not as well suited to cooking as the flavours become much more intense.

Brie Fermier

This farmhouse French Brie has an amazing depth of flavour – similar to authentic raw milk Brie (which is banned in Australia). It is rich and creamy with a full, round yeasty, mushroomy note and an ever-so-slight minerally finish. The texture is soft and bulging. The flavoursome rind starts out as off-white, but will become more ivory.

Swiss Raclette

Since the middle ages, shepherds used to heat the raclette in front of an open fire, scraping off the melted layer onto a plate. The rind is sticky and pungent with aroma of cured meat. Used in the same way today and served with potatoes, cornichons and cured meat.

Soumaintrain

Like its cousin the famous Epoisse, this washed rind has an orange rind with rich mushroomy and cured meat flavours. However the brine used in the maturation process don’t contain the local grape spirit like Epoisse , and makes this cheese more wine friendly.

Milleens

Milleens is Irelands longest established farmhouse cheese dairy. The cheese is still hand made by the Steele family with milk sourced from a neighbouring herd. This soft cow’s milk washed rind has a nice woody and salty flavour coming from the brine and the shelves used during the affinage.

St Killian

St Killian is the signature cheese from the Carrigbyrne dairy. Humming Bark

The Carrigbyrne family dairy started 30 years ago with the head cheesemaker Paddy Berridge following is travel to France-Normandy. Using the milk from their herd of cows, this cheese is the Irish twist on the classic Mont d’or. Matured in spruce bark, this strong washed rind cheese is so soft that it can be eaten with a spoon.

Fourme D’Ambert

Fourme d’Ambert is named after the town of Ambert in the region of Auvergne. It’s made in a unique cylinder shape, which gives it a distinctive shape on cheeseboards. The texture is dense and creamy. With its strong blue pockets, the cheese is quite mild with a nice hearthy flavour.

Blu 61

A creamy cow’s milk blue vein cheese soaked in red dessert wine (Passito di Raboso) and pressed with cherries. The flavour is reasonably strong from the plentiful blue/green veins and balanced by the sweet, dark fruit notes in the wine and the cherries on top. The flavour lingers and envelopes the entire palate with a pleasant creaminess to finish. The texture is dense and creamy, slightly moist from the wine treatment.

Affidelice

An incredibly creamy cheese washed with Chablis wine during maturation to create a full, bold flavour and deep orange colour. Serve Affidelice in its wooden box with a spoon so your guests can dip into the luscious, gooey interior. Affidelice is similar in style to Epoisses, although not quite as strong.

Alta Badia

A classic mountain cheese made with whole milk from local farms in the lush mountainous region of Alto-Adige. Alta Badia has a smooth texture and slightly savoury, spicy, nutty flavour which is rich but certainly not strong – it is a little reminiscent of a gruyère, but the texture is a little softer. It is aged for 6 months.

Casatella Trevigiana DOP

A special type of stracchino, Casatella is a traditional fresh cheese of the Treviso region and DOP regulations state that only milk from the local area can be used to make the cheese. It has a creamy, milky, slightly sweet flavour with a dense, soft texture. It can be eaten fresh and is also used in regional recipes including gnocchi, risotto and baked dishes.

Dolomiten

Dolomiten is one of the most familiar and popular cheeses in South Tyrol – Italy’s northern most province bordering with Austria and Switzerland.  This cheese is made with milk sourced from small farms in the local valley and is similar in many ways to the mild Swiss cheese Emmenthal. The flavour is sweet and nutty with slight burnt caramel and floral notes. The texture is smooth and even, supple with characteristic ‘eyes’ throughout.

Sbrinz

Although not as famous as other Swiss cheeses, Sbrinz has been made for centuries in central Switzerland. It’s a mature cheese with a hard texture and complex round flavour – slightly bitey with a rich, savoury finish and hints of tropical fruits and toasted nuts. Stelvio

Another classic mountain cheese from the Trentino Alto-Adige region in northeastern Italy – and this one is strong and stinky! Don’t be put off by the pungent smell – Stelvio has a delicious savoury flavour with hints of cured meats and fried mushrooms on the finish. The texture is smooth and semi-firm, a little supple with some small eyes through the centre. A great addition to cheese and antipasto platters.

Stracchino Crema del Piave

Stracchino is a fresh cheese, milky and lactic with a hint of yeasty flavour peeping through. These individually wrapped stracchino are made by a specialist dairy near the Piave river in Veneto, hence the name which translates to ‘cream of Piave’. The texture is soft and spreadable – ideal for laying on fresh crusty bread or adding to a sandwich or panini. Use as a melting cheese in pasta and baked dishes. Best eaten as soon as possible.

Asiago Stravecchio di Malga dell’Altopiano dei Sette Comuni

Aged Asiago from the Mountain Dairies of the Plateau of the Seven Communities. This is a very rare, artisan version of Asiago, matured for 19 months and produced only with raw Summer milk (June – September) from mountain pastures, no silage or GMO feeds are permitted. The aroma is amazing and the flavour is initially sweet, gradually tending to savoury-nutty with hints of green pastures and toasted bread – incredibly complex. In honour of the traditional methods used to make this cheese, it’s a member of the Slow Food Presidium.

Caciocavallo Podolico della Basilicata

Caciocavallo is a unique style of cheese commonly found throughout southern Italy. It is always made in a pear shape, then twisted into a knot at the top and tied together in pairs. This particular caciocavallo is made with the milk from Podolico cows – a rare breed of native cow that produces very high quality milk in very low quantities which gives the cheese an amazing aromatic complexity that lingers on the palate. The flavour is full and piccante with a pronounced bite. This cheese is a member of the Slow Food Presidium.

L’Etivaz

L’Etivaz is made in the style of traditional artisan gruyère and protected by appellation law which states it can only be made by hand in a copper cauldron with unpasteurised milk from cows grazing on Summer alpine pastures (May – October only). Typical of many Swiss mountain cheeses, it has a rich, nutty flavour with hints of dried fruit, grassy meadows and melted butter and a firm, smooth texture.
